30 Minute Bean-Free Chili

This "chili" is so tasty I have been making it on repeat for one of my private cooking clients. I never fully measure anything, but I wanted to share the gist with you so that you can recreate it at home. Feel free to customize as you'd like!

Ingredients:

  • 1 tbsp ghee or butter
  • 1/4 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 lb ground meat of choice
  • 1.5 tbsp tomato paste
  • Cumin, smoked paprika, chili powder, salt
  • 1/2 cup bone broth
  • 1 small japanese sweet potato, peeled and cubed
  • To top: cheese, cilantro, lime, green onion, avocado

Add the ghee to a large pan/pot and, once hot, add the onion and garlic and saute for a few minutes until soft - be careful not to burn. (omit if sensitive to alliums)

Push onion & garlic to the side and add the meat, allowing to brown and break it up as it cooks. Once almost cooked through, add the tomato paste and seasonings and mix well.

Add the bone broth and the sweet potato and mix well to combine. Allow to simmer for about 15-20 minutes or until the potatoes are fork tender. If it's too dry, add a bit more broth.

Taste for seasoning and add as needed.

Serve topped with your favorite toppings like shredded cheese, cilantro, lime, green onion or avocado.
