You might not believe me, but this always satisfies my cravings for mac n cheese and it’s HEALTHY and dairy-free and gluten-free and packed with nutrients. Plus, hemp seeds are a great way to add in some extra protein
Ingredients:
4 Strips of Bacon
1 head of Cauliflower, cut into small pieces
1/4 cup Frozen Peas
Cashew Cream Sauce:
1 cup Raw Cashews, soaked in hot water for 4 hours
1/2 cup Hemp Seeds
3/4 cup Water
2 Tbsp Nutritional Yeast
2 Tbsp Dijon Mustard
1 tsp Salt
1/2 tsp Onion & Garlic powder
Pinch of Turmeric (for color)
Directions:
- Blend all of the sauce ingredients until smooth and creamy
- Cook bacon in a large pan over medium heat then set aside (don’t drain the pan!)
- Cook cauliflower in the bacon fat until it’s beginning to brown and become tender (about 10 minutes)
- Turn heat to low and mix in the frozen peas and cashew cream until fully incorporated
- Cut up the bacon and sprinkle on top to serve!
