Cherry Chicken Salad

A super simple refreshing lunch or dinner that’s also perfect for meal prep!

You can pack it in your lunch for work (or school) with some crackers or lettuceI used leftover roast chicken, but you could use rotisserie chicken or whip up a couple breasts just for this recipe.

The cherries add a little sweetness, and I would’ve added some celery too if I had it!

Ingredients:

2 cooked chicken breasts, diced

1/4 finely chopped dill

1/4 cup minced red onion

1/2 cucumber, diced

1 cup cherries, diced

1/4 cup mayo

1/4 cup greek yogurt

2 tbsp olive oil

1 tbsp celery seed

Salt

Pepper

Directions:

Mix all ingredients in a large bowl and enjoy! Serve on toast or with crackers or mixed greens in a salad
