Fried Egg and Avocado Tostadas

This is always one of my favorite brunch options when Iā€™m at a restaurant, so I figured I would make a healthier version that can be enjoyed any day of the week

(Serves 2)

Ingredients:
4 eggs (pasture-raised organic is best)
1/2 tbsp avocado oil
4 small tortillas
1 ripe avocado
1/2 lime, juiced
Pickled onions
Cilantro
Salt & pepper to taste

Directions:
1. Heat the avocado oil in a pan over medium heat. Once hot, crack your eggs directly into the pan and season with salt and pepper
2. Reduce heat to low and cover with a lid (this helps set the whites)
3. While the eggs cook, mash the avocado in a bowl and mix with lime juice and salt
4. Remove eggs from pan once cooked (Eggs are done when you shake the pan and the yolks wiggle but the white are set)
5. Add your tortillas to the pan with any leftover oil and turn heat back to medium. Cook on each side for close to a minute until crispy
6. To serve, spread mashed avocado on each tortilla followed by a fried egg, pickled onion and cilantro

I managed to fit 2 eggs on the tortillas I used and eat it with a fork and knife BUT if you just do one egg each you can also eat it like a lil crispy taco :ā€™) Might as well throw some salsa or hot sauce on their too
