Japanese Sweet Potato Pizzas

This is my new hyperfixation recipe it is SO good for when you're craving pizza or just something cozy and comforting but its still nutrient dense and nourishing

I used a truffle cheese for these (insane) but you can use any cheese you'd like. I also used some homemade marinara, but feel free to use your favorite jarred sauce to keep it simple.

You could totally add toppings as well like mushrooms and onions or even pepperoni just depending on what you have and what you're craving!

Pro tip: look for a pretty large and evenly shaped sweet potato to get big, uniform slices

Ingredients

1 large japanese sweet potato, sliced into 1/4" rounds

Avocado oil spray

Salt

1/3 cup marinara

1 cup shredded cheese

Directions

Preheat the oven to 425 and add the sweet potato slices to a parchment lined baking sheet. Spray with avocado oil and season with salt.

Bake in the preheated oven for about 20 minutes, flipping halfway through, until tender and beginning to turn golden.

Top each slice with a spoonful of marinara and a sprinkle of cheese then return to the oven for another 5 or so minutes until the cheese is melted.

Enjoy right away!
