The simplest recipe it’s hard to even call this a recipe, and it’s insanely delicious! Only a few ingredients and you’re ready to rumble
If you’ve never tried kimchi fried rice, you’re missing out - it’s a little spicy and a little briny and a lot of fun. This is definitely not the most authentic version, but we’re just here for simplicity and clean eats!
This is the perfect base for salmon or soft boiled eggs or just eat it on its own
Ingredients:
1 cup white rice
1 jar kimchi (I love @wildbrine)
2 tbsp ghee
Salt
Sliced green onion
Directions:
Cook your rice the night before or in the morning then let cool in the fridge
Strain the kimchi over a bowl so you save the juices, then chop up all of the kimchi (you want to make sure the kimchi isn’t super wet)
Heat the ghee in a pan over medium heat and add the chopped & drained kimchi to the pan. Cook for a few minutes until the kimchi starts to crispy up a bit
Add your cooked rice into the pan and mix well. Cook for a few more minutes then add a splash or 2 of the reserved kimchi juices and cook until fully incorporated
Serve topped with sliced green onions!
