This is the first year that I really learned to appreciate citrus season and grew a real fondness for oranges, particularly cara cara oranges. The color is gorgeous and the flavor is sweet but not too sweet - I could eat them all day long.
In this dish, I paired them with thinly sliced fennel, which adds a unique licorice flavor.
Avocado and pumpkin seeds add healthy fats and fibre to round out the dish
Ingredients
1 cara cara orange, peel removed and thinly sliced
1 fennel, thinly sliced
2 tablespoon dill, finely chopped
2 tablespoon olive oil
2 tablespoons red wine vinegar
Salt
2 tablespoons pumpkin seeds
1/2 avocado, diced
Fennel fronds
Directions
Add the orange, fennel and dill to a large mixing bowl then add the olive oil, red wine vinegsr and some salt. Mix well to combine.
Transfer to a serving dish then top with the pumpkin seeds and avocado as well as a few fennel fronds.
