Paleo Chicken Nuggets

Been working on this recipe for quite some time, and I finally nailed it. These are gluten-free, grain-free and paleo, but you would never guess. The key is using grain-free chips in place of the typical breadcrumbs for a perfectly crispy exterior 


(Makes about 20 nuggets)


Ingredients:

1 lb chicken breast, cut into bite sized pieces

1 egg

1.5 cups crushed grain-free tortilla chips (I used @thrivemarket)

1 tsp garlic granules

1/2 tsp salt

2 tbsp avocado oil


Directions:

Add the egg to a bowl and whisk. Combine the chip crumbs, garlic granules and salt in another bowl

Dip each chicken piece in the egg then toss in the crumb mixture and set aside on a plate. After all of the chicken is “breaded,” heat the avocado oil in a large pan over medium heat

Once the oil is hot, add the nuggets one at a time to the pan and cook until golden and cooked through, about 3 minutes each side. You’ll most likely need to do this step in 2 batches to avoid overcrowding

Serve with ketchup and other dips of choice
