Peanuty Chicken Salad

Crunchy, colorful and full of flavor (and packed with protein and fiber and healthy fats and polyphenols)


Gluten free, dairy free, sugar free, high protein, low carb


Ingredients

Chicken breast

Red leaf lettuce

Purple cabbage

Red bell pepper

Carrots

Crushed Almonds


For the peanut dressing:

1 tbsp peanut butter

1 tbsp toasted sesame oil

1 tbsp rice vinegar

Optional squeeze of honey

Splash of water to thin if needed

Directions

Mix the dressing ingredients in a small bowl using a whisk or fork. Add the salad ingredients to a bowl and top with the dressing and ENJOY!
