Protein Peanut Butter Cups

These taste so much better than the classic, and they’re made with just a few simple ingredients plus protein powder for extra nutrition!  

I used Aloha chocolate protein powder which is plant based and lightly sweetened. I typically prefer animal based protein powders, but plant based definitely mixes into things easier so it's my go-to for things like these chocolates just to up the protein content and benefits


(makes about 24 mini cups)


Ingredients


For the filling:

1/2 cup smooth peanut butter

2 scoops protein powder

2 tbsp maple syrup


For the chocolate layers:

2/3 cups 100% chocolate chips

2 tbsp coconut oil

2 tbsp maple syrup


Directions

Combine the filling ingredients in a bowl and mix well until fully incorporated. It should be a doughy consistency


Add the chocolate ingredients to a small pot and heat on low until fully melted. Fill a candy mold (or mini cupcake liners) with a layer of the chocolate, then place in the freezer for about 10 minutes until hardened


Add small discs of the filling to each mold then cover with the remaining chocolate. Return to the freezer to harden for another 10 minutes then enjoy!
