Chia pudding is one of my favorite breakfasts if I'm not in the mood for eggs. It's simple to make and packed with protein, and this version is sugar-free! Just chia seeds and coconut milk with whatever toppings you'd like
You can double or triple the recipe to make more for later
Ingredients:
1/2 cup coconut milk
1/2 cup water
1/4 cup chia seeds
2 tbsp hemp seeds (optional)
yogurt
frozen berries (I love blueberries)
cacao nibs
Directions:
Make the chia pudding by mixing the coconut milk and water with the chia seeds in a jar and let sit in the fridge overnight. You can also mix in some hemp seeds for extra protein!
Add a scoop to a glass and top with your favorite yogurt, frozen blueberries and cacao nibs
