Turmeric Banana Oat Pancakes

I made these for a client this week so that she would have a premade breakfast option for her family ready to go - they can be stored in the fridge and reheated as needed.


I’d recommend serving with a protein source like sausage or eggs to avoid a blood sugar spike, and it will help you feel more satiated throughout the day!


Ingredients:

1 cup oat flour

1 tsp turmeric

1/2 tbsp baking powder

1/4 tsp salt

1 banana, mashed

1 egg

2/3 cup milk

2 tbsp maple syrup

1 tsp vanilla

2 tbsp melted coconut oil


Directions:

Mix the dry ingredients and wet ingredients separately then add the dry into the wet and mix thoroughly to combine.


Heat a pan over medium low heat and melt some coconut oil or ghee.


Add about 1/4 cup of the batter to the pan, you can fit 2 or 3, and cook for a minute or so until the top begins to bubble and edges begin to set.


Flip and allow to cook for another couple of minutes then remove and set aside.


Melt more ghee or coconut oil and repeat until all of the batter is cooked.


Top with strawberry compote and bee pollen as pictured, or some greek yogurt and fresh fruit!
