Bacon Breakfast Quesadilla

A healthy 5 ingredient breakfast that only uses one pan and takes less than 10 minutes to make!

Dairy-free, gluten-free and flavor-filled. Use grain-free tortillas to make this paleo

(makes 1 serving)

Ingredients:

1 strip of bacon

2 eggs

2 gluten-free tortillas (I used Unbun Foods)

1/2 an avocado

1-2 tbsp dairy free cheese

Salt & pepper

Directions:

Cut bacon into smaller pieces and cook on a pan over medium heat. Once crispy, remove and set aside

Turn the pan down to low, whisk the eggs in a bowl with a little salt and pepper and add to the pan with the bacon fat. Cook, scraping the pan continuously until the eggs are set. Remove and set aside

Mash the avocado and spread it on one tortilla and spread the df cheese on the other tortilla. Add the eggs and bacon pieces, close the dilla, and heat in the pan for about 30 seconds each side

Top wit hot sauce (I used  Truff hot sauce of course)
