Blackberry Chia Jam

Homemade jam is super simple and so much healthier since you can control how much sugar you add. Plus, thickening it with chia seeds adds extra nutrients! 


It’s versatile and can do no wrong - add to yogurt bowls, toast, brownies, lemon poppyseed loaf (!!!) 


You can use any frozen berries/fruit you want (raspberries are another fave)


Ingredients:

10oz bag frozen blackberries (about 1 1/4 cups)

1 tbsp coconut sugar 

1.5 tbsp lemon juice 

2 tbsp chia seeds


Directions:

Add the frozen blackberries to a sauce pan over medium heat and cook, stirring occasionally,  until the fruit starts to breakdown and release its juices (about 5 minutes)


Mix in the coconut sugar (add an extra tbsp if you want it sweeter) and lemon juice and bring mixture to a simmer for another 5 minutes


Turn the heat to low, add the chia seeds, and stir well to combine. Let it cook for a few more minutes on the stove to thicken


Remove from heat and let cool, then store in a mason jar or air-tight container in the fridge!!
