Blueberry Banana Oatmeal Bars

Just a super simple breakfast recipe that adds a bit more fun to classic oatmeal

These bars are perfect for meal prepping and make a great breakfast on the go or quick snack (or even a sweet treat). Serve them with some greek yogurt for extra protein and to keep your blood sugar balanced.

(makes about 9 bars)

Ingredients:

3 bananas, mashed

2 eggs

Splash of almond milk

1/4 tsp baking powder

1 tsp vanilla 

3 cups organic oats 

1 tbsp cinnamon

1/4 cup frozen/fresh bloobs

Directions:

Preheat oven to 350


Mix wet ingredients in a large bowl then add the dry ingredients. Stir in the blueberries 


Add batter to a parchment paper lined glass dish (mine is 8x11 ish)


Bake for 20-25 minutes until fully set. Let cool before slicing then enjoy with some greek yogurt for added protein
