The Best Breakfast Burritos

I might be a little biased, but these burritos are absolutely incredible and perfect for a Saturday (or any) morning. They’re packed with nutrients, and they’re gluten-free and dairy-free, so what’s not to like?!


(makes 1 burrito)


Ingredients:

1 Siete Foods burrito sized tortilla

2 Tbsp Primal Kitchen mayo

1 tsp (or more) Truff hot sauce

Small handful of arugula

2 eggs

Salt & pepper

Handful of roast sweet potatoes 

1/4 of an avocado, sliced


Directions:

  1. Mix the mayo and truff to make a spicy truffle mayo (add more turf if you want it spicier)
  2. If you’re using leftover sweet potato, heat it in an air fryer or on a pan with a little oil/ghee over medium heat, then remove and turn the heat to low
  3. Whisk the eggs in a bowl with salt & pepper, add a little more oil/ghee to the pan and cook the eggs
  4. Warm the tortilla in a large pan for a few seconds on each side until soft
  5. Spread the spicy truffle mayo on, then add arugula, scrambled eggs, roast sweet potatoes and avocado



If you have bacon on hand, definitely add that as well!
