Ultimate Bacon Breakfast Tacos

Cooking your eggs low and slow in bacon fat is truly the key to the most delicious eggs in town! But, if you don’t eat meat, cook your eggs in butter or avocado oil! Feel free to use no cheese/a different cheese depending on your preferences but do NOT skip the green onion

(makes 4 tacos)

Ingredients:
4 eggs
2 strips of bacon ( I love Force of Nature)
4 tortillas of choice
2 green onions
salt & pepper to taste

For serving: mashed avocado, pickled red onions, sprinkle of feta cheese, cilantro, salsa

Directions:
1. Cook bacon in a pan until crispy and most of the fat has rendered. Remove bacon and pour excess bacon fat into a jar for later use (keep a little in the pan for your eggs!)
2. Throw your green onions on the hot pan and char them up a bit. Remove and slice them up
3. Whisk eggs in a bowl with a pinch of salt and pep
4. Once your bacon pan has cooled a bit, pour eggs into the pan and cook on super low heat stirring constantly (y’all need to use a rubber spatula it makes all the difference)
5. Remove your eggs from the pan once they are mostly cooked through but still a lil soft
6. Heat your tortillas in a hot dry pan for about 20 seconds each side
7. Now make your tacos! Spread mashed avocado on your tortillas, then add scrambled eggs, bacon pieces, chopped charred green onion, pickled red onion and finish with some salsa, a sprinkle of feta cheese and cilantro
