Cauliflower Mac n Cheese

You might not believe me, but this always satisfies my cravings for mac n cheese and it’s HEALTHY and dairy-free and gluten-free and packed with nutrients. Plus, hemp seeds are a great way to add in some extra protein


Ingredients:

4 Strips of Bacon

1 head of Cauliflower, cut into small pieces

1/4 cup Frozen Peas


Cashew Cream Sauce:

1 cup Raw Cashews, soaked in hot water for 4 hours

1/2 cup Hemp Seeds

3/4 cup Water

2 Tbsp Nutritional Yeast

2 Tbsp Dijon Mustard

1 tsp Salt

1/2 tsp Onion & Garlic powder

Pinch of Turmeric (for color)


Directions:

  1. Blend all of the sauce ingredients until smooth and creamy
  2. Cook bacon in a large pan over medium heat then set aside (don’t drain the pan!)
  3. Cook cauliflower in the bacon fat until it’s beginning to brown and become tender (about 10 minutes)
  4. Turn heat to low and mix in the frozen peas and cashew cream until fully incorporated
  5. Cut up the bacon and sprinkle on top to serve!

Makes about 4 servings
