The perfect cozy meal for breakfast, lunch or dinner made with nourishing ingredients like collagen rich bone broth, warming spices and gut supporting ghee and ginger.
Since this entire soup gets blended, you don’t need to spend too much time on your chopping or worry about your knife skills - it’s simple and fool proof!
Ingredients
1 tbsp ghee
1/2 sweet onion, diced
4 cloves garlic roughly chopped
1 inch knob ginger, roughly chopped
1 tsp dried thyme
1 tbsp fresh sage, minced
Salt
2 tsp curry powder
2ish medium sized sweet potatoes, cubed (about 4 cups)
4 cups bone broth
Directions
Heat ghee in a large pot over medium heat then add the onion, garlic and ginger and sauté until fragrant and onion is soft, about 5 minutes
Add the thyme, sage and curry powder and cook for another minute then add the sweet potato and salt and combine
Pour in the bone broth, bring to a boil then reduce to a simmer for about 15 minutes until sweet potato is fork tender
Remove from the heat and either use an immersion blender or transfer to a blender and blend until creamy
Serve topped with crumbled bacon, crispy sage and a drizzle of olive oil
