Rosemary Roast Chicken

Roast chicken is so simple to make and will give you sooo many meals (make sure you save all of the bones to make bone broth) 


You can really use any hearty herbs here, but my favorite is definitely fresh rosemary - your house will be smelling DELISH


Ingredients:

3 carrots, quartered

1/2 onion, cut into chunks

1 lemon, sliced into rounds

1 whole chicken

2 tbsp butter

2 tbsp fresh rosemary

1 tbsp salt

2 tsp pepper


Directions:

Preheat oven to 375 degrees and pat chicken dry


Add carrots, onion and lemon slices to a roasting pan or cast iron dish then add the chicken on top


Melt the butter then drizzle it all over the chicken and evenly coat with the rosemary, salt and pepper


Place in the oven and cook for about 1.5 hours until juices run clear and leg joint is wiggly to the touch



Serve with rice and salad for the best Sunday night dinner 🤤
