Ingredients:
2 cups mashed potatoes
1 lb grass-fed ground beef
1 Tbsp ghee
1/2 white onion, diced
2 large carrots, finely chopped
1-2 celery, chopped
3 garlic cloves, finely chopped
1 tsp dried oregano
1 tsp dried thyme
1/2 cup frozen peas
3 Tbsp tomato paste (ketchup also works)
2 Tbsp balsamic vinegar
salt & pepper
fresh parsley to serve
Directions:
- Heat ghee in an oven-safe pan over medium heat then add carrots, celery, onion and garlic
- Cook, stirring often, until softened (about 5 minutes) then add thyme and oregano
- Add the ground beef to the pan and cook, breaking it up with a spoon as it browns. Season with salt & pepper to taste
- Add tomato paste and balsamic vinegar and mix well, allowing the meat and veggies to simmer for a minute
- Add the frozen peas and mix to warm through
- Turn the heat off and add the mashed potatoes in a thin layer on top then drizzle with a bit of oil or melted butter
- Broil for a few minutes until the potatoes start to brown in spots
- Top with fresh parsley and a drizzle of olive oil
