Quick and easy weeknight dinner (that can be adapted for whatever meat and sauce and noods you have on hand)
I threw this together in about 15 minutes and had leftovers for the week!
Ingredients:
1 tbsp ghee
1/2 yellow onion, diced
1 lb ground chicken (Force of Nature is the best)
1 jar Truff pomodoro sauce
1 package Lotus Foods pad thai noodles
Fresh grated parm
Fresh basil
Directions:
Heat the ghee in a large pan then add the diced onion and sauté until soft. Add the ground chicken and cook until no pink remains, breaking it up as it cooks
Meanwhile, bring a large pot of water to a boil and add the noodles (they cook for about 7 minutes - make sure to stir often)
Pour the jar of Truff into the chicken pan and mix well. Bring to a low simmer then drain the noodles and add to the pan. Toss to combine
Serve topped with fresh parm and basil
