Cauliflower and Potato Mash

A healthier, lightened up version of a classic that's an easy way to sneak in more veggies for both kids and adults!

Cook the potatoes and cauliflower in one pot to save time and reduce mess, then use a masher or an immersion blender or transfer to a blender for maximum creaminess.

Ingredients:

Avocado oil

5 garlic cloves

2 lbs small yellow potatoes, cubed

1 large head cauliflower, cut into florets

2 tbsp butter

2 tbsp milk or yogurt

Salt

Directions:

Drizzle oil over garlic and broil on a parchment lined baking sheet for about 5 minutes until edges are golden brown


Add the potatoes and cauliflower to a large pot and cover with water. Boil for about 20 minutes until fork tender then add in the roasted garlic, butter and milk and mash well (I used an immersion blender).

Season with salt to taste
