Celery, Date & Walnut Salad

This salad might not sound great on paper, but I'm telling you it is incredibly delicious and so flavorful. Plus, it's incredibly simple to make and can pair with really any main dish or protein.

I never know what to do with celery - I buy it to make soup and only use 3 stalks and then end up with a wilting bunch in my fridge for weeks, but no more!

Feel free to use whatever toasted nuts you want - almonds or pistachios would be great too. And feel free to switch up the cheese - I think a hard parm is ideal, but I first made this with a raw cheddar and any hard cheese will do!

Ingredients

1 bunch celery, sliced in 1/4" thick pieces

4 dates, pitted and diced

1/2 teaspoon chili flakes

3 tablespoons lemon juice

1/4 cup olive oil

Salt & pepper to taste

1/4 cup parmesan, shaved with a vegetable peeler

Directions

Add all of the ingredients (except the cheese) to a bowl and toss well to combine.

Transfer to a serving dish then top with the cheese and an extra sprinkle of chili flakes.
