Gluten Free Sausage Cheddar Biscuits

Made with organic gluten free flour, raw cheddar and organic chicken apple sausage


These biscuits are so buttery and flakey and honestly not as difficult to make as I had expected (but I did have to go through some trial and error)


Gluten free flours are all a little bit different, so you might have slightly different results depending on which one you use (like baking time and density). I used Arrowhead Mills Organic Gluten Free All Purpose Flour for these - I would definitely recommend organic to reduce pesticide contamination.

For the sausage I used Bilinski's because they're delicious and made with clean ingredients. They're pretty small, so I used 3. If you use normal sized sausage you will only need 1.


Ingredients:

2 cups gluten free all purpose flour

1/2 tsp salt

1/2 tbsp baking powder

1 tablespoon coconut sugar

6 tbsp unsalted butter, cut into small cubes

1 cup shredded raw cheddar cheese

3 organic chicken apple sausage, diced

1 cup buttermilk (or mix 1 cup milk w/ 1 tbsp lemon juice to make your own)

Honey to drizzle


Directions:

Preheat oven to 425. 


Mix together the flour, salt, baking powder and coconut sugar in a large bowl.


Cut in the butter(make sure it’s very cold) with your hands until the dough becomes clumpy. Add the cheese and sausages and mix in with your hands.


Add the buttermilk and mix until combined and a dough forms. It should be slightly sticky but not too sticky. 


Place the dough on a surface dusted with a little flour. Fold the dough over on itself a few times then pat into a 1 inch thick sheet. Use a biscuit cutter, glass or mason jar lid to cut your biscuits (don’t twist when cutting).


Place the biscuits on a parchment paper lined baking sheet and bake for about 20 minutes or until tops are golden. Drizzle with honey and enjoy!
