Maple Roasted Carrots

If you need a quick and easy side dish for a weeknight dinner or even Thanksgiving, this is IT


These Maple Roasted Carrots could not be simpler to make, and are always a fan favorite even amongst kids!! Feel free to use more or less maple syrup depending on how sweet you want them, and I suggest doubling the recipe so that you’ll have some leftovers 


Ingredients

2 lb large carrots

2 tbsp avocado oil 

1 tbsp maple syrup 

1 tsp sea salt 

1 tsp paprika

2 tsp dried thyme 

1 tsp garlic powder


Directions

Preheat oven to 425 and line a baking sheet with parchment paper

 

Cut the carrots into thirds and then into quarters (or just halves depending on their size) - you want them to be fairly uniform - then add to a large mixing bowl


Toss with the oil, maple and seasonings. Spread on the baking sheet and bake for 15-20 minutes until for tender and beginning to crisp (you may need to do this in 2 batches to avoid overcrowding)
